Meals from your pantry: roasted chickpeas!

Roasted Chickpeas: This week I bring you a ridiculously simple recipe -- and if you've been paying attention at all, most of these recipes are pretty simple already. But this is the first to involve only 1 can of goods, olive oil and whatever spices you have lying around.

A can of chickpeas
Spices (preferably spicy)

Heat the oven to 400 or so.  Open the can of chickpeas and drain out the liquid in the sink.  It's not gonna be useful this time.  Dramatically dump the beans onto a large, flat pan and spread them out.  Drizzle olive oil and generously apply spices.  Stick the pan in the oven for 20-30 minutes, or until you're satisfied with the crunchiness. 

Ok, this is basically the same recipe as the sweet potato fries last week, but you don't even have to have fresh vegetables!  Or go near a knife!  This is for those weeks when you have nothing but pantry items to depend on - a sad but pertinent experience if you're going into nonprofit work.

Roasted chickpeas are the perfect dish for giving friends something to munch on while drinking, stopping hunger til dinner -- just don't eat the whole serving yourself: way too much fiber for one person to handle.
